If you happen to plan lunch or dinner at Noma, book way in advance, possibly even before leaving home...
Since 2010, this starred restaurant has been listed four times as the world's best restaurant by Restaurant magazine (in 2010, 2011, 2012, and 2014 respectively). Chef René Redzepi is extremely bold in reinventing Nordic gastronomy, sometimes to the point of shocking diners. Noma is in fact an acronym for Nordic gastronomy: 'Nordisk Mad'.
So be warned that your culinary experience here will be unique, away from stilted or established standards. You will not find a tablecloth on Noma tables and the servers, adorable modern-day Vikings with tattooed arms, bring you the 20 dishes that make up one of the three tasting menus with a certain nonchalance: “Vegetables” (vegetarian and vegan) from June 25th to September 21st, “Game and forest” from October 15th to December 21st, and “Seafood” from January 7th to May 30th. The number of dishes might sound scary, but the well-thought-out servings do not make you feel the heaviness characteristic of many more traditional meals.
